The product

Black Tiger, the way nature intended.

Black Tiger (Penaeus Monodon) from certified organic aquaculture: the shrimp grow up in near-natural ponds among mangroves and feed on what the pond provides. After the harvest they are processed fresh and individually quick-frozen.

You can taste it: a firm bite yet tender, a vivid colour and a pure, natural flavour.

Origin

Raised in the mangroves of the Mekong Delta.

Mangroves and ponds form an intact ecosystem: habitat and pantry at once. Nature itself provides the food.

Extensive farming

Only 10 to 12 shrimp per cubic metre of water – intensive farming uses around 50 to 70. It takes 7 to 9 months to reach harvest size.

Mangrove protection

Every farm keeps at least 60 % of its area as mangrove forest and follows a fixed reforestation plan.

Traceable

Four partner farms, all sourcing their larvae from the same contracted hatchery. The origin can be traced back to the broodstock.

Harvest at full and new moon

Caught by hand, put on ice at once and processed within two hours at most – with an unbroken cold chain.

Pan-seared Black Tiger shrimp with garlic, parsley and a grilled lime on an olive wood board
Serving suggestion

Enjoy

High heat, little time, à la minute.

  1. Thaw gently. Overnight in the fridge, in a sieve over a bowl. Discard the thaw water, rinse briefly, pat dry thoroughly.
  2. Marinate. Purée garlic finely in olive oil, stir in rosemary or thyme. Rub the shrimp with it and leave for 15 to 30 minutes.
  3. Sear hot and fast. In the pan or on the grill over high heat, 3 to 4 minutes per side (6/8). A glassy core is intended – add sea salt flakes only at the end.
